Baked Cod With Parmesan Crust, Roasted FM Asparagus

Dear Eva,

This meal takes about 15 minutest to prepare and about 20 minutes to cook. At the table, you said “more fish, more fish”. It’s crazy how much pleasure I derive from watching you enjoy your food.

Baked Cod with Panko Crust:  Lightly salt and pepper the cod on both sides (remove any bones before cooking).  In one pie dish, lightly beat an egg. In another pie dish place panko, some fresh herbs (tonight I used parsley, you could use thyme or some chopped rosemary) (or if you don’t have herbs you can use some paprika + a touch of cayenne pepper),salt, pepper, and some grated parmesan cheese. Dip the cod into the egg, then into the panko mixture to coat, and place into a lightly oiled baking dish. Drizzle fish with a little olive oil and bake at 400 degrees for about 20 minutes.

Roasted Asparagus: Trim ends off asparagus and place into baking dish. Toss with olive oil, salt and pepper. During the last 10 minutes of cooking the fish put the asparagus into the oven. You want the asparagus a little bit browned but can burn quickly so watch it the last few minutes of cooking.
