Crispy Brussels Sprouts!
Kids go crazy for these crispy shredded Brussels spouts. Roasted in rich olive oil, sprinkled with crunchy salt, they have the potential to turn any hater of brussels sprouts :). Instead of slicing your own Brussels sprouts in the food processor you can purchase them pre-shredded/sliced at most grocery stores.
Ingredients
1 pound of Brussels sprouts (about 15) – end stems removed
2 TBSP extra virgin olive oil
Kosher salt and freshly ground pepper
Optional: ¼ cup freshly grated parmesan or cheddar cheese
Process
Preheat the oven to 400 degrees.
In a food processor fitted with a slicing blade, coarsely slice the Brussels sprouts. OR coarsely chop brussels sprouts with a knife. OR purchase pre-sliced brussels sprouts at Whole Foods, Trader Joes, and other grocery stores.
On a rimmed baking sheet toss the Brussels sprouts with the olive oil, and season with salt and pepper.
Roast in the oven for 20-25 minutes until the sprouts are tender and browned in spots. (Rotate the pan and stir the Brussels sprouts halfway through roasting).
Sprinkle with cheese if using and serve (cheese will melt over the hot brussels sprouts).
