My 6 year old daughter and I went to the Farmer’s Market this past Sunday morning. Here’s a sample of what we took home. I heart summer. Look at those colors!
When we got home I made us a quick lunch using some of these fresh ingredients we just purchased before we headed out to San Francisco for the afternoon.
First, I pan-fried a piece of fresh wild Salmon in olive oil, salt, and pepper in a skillet.
While the salmon was cooking I mixed together in a bowl:
one peach (skin on) pitted and chopped
one ear of corn, kernels removed
1 small pickling cucumber (or 1/2 regular cucumber, peeled)
fresh basil (or mint) chopped (about 1/4 cup)
squeeze of lime (1/2 lime)
drizzle of olive oil (less than 1 TBSP)
It’s the summer of simple cooking!
Perfect for topping grilled fish, shrimp, or chicken. Or delicious enough to eat alone with a spoon!
