½ cup flour
¼ tsp salt
2 TBSP sugar
¾ cup whole milk (can sub unsweetened, unflavored almond milk)
½ tsp vanilla
2-3 cups mixed/sliced berries (sub apples or cherries, frozen ok)
Splash of maple syrup
Powdered sugar, optional
- Preheat oven to 375 degrees.
- Smear an 8×8 shallow baking dish liberally with butter. Add mixed berries (or other fruit) to the bottom of this dish. Add a splash of maple syrup and gently combine with the fruit.
- In a blender or food processor (or with an immersion blender) mix together flour, salt, eggs, sugar, milk, and vanilla.
Pour batter over the fruit and bake until cooked about 20-30 minutes or until the custard is just set. Sprinkle with powdered sugar if desired.
